George Calombaris is giving up his Melbourne restaurant ‘Hellenic Republic’.

The greek restaurant will close and in its place will be “a new look, new name, new cuisine and new chef-partner”, according to The Herald Sun.

Matt Wilkinson will take over the restaurant and turn it into a British-influenced, Crofter Dining Room and Bar

“I haven’t been this excited, or nervous, since I did the changeover from fine dining to sharing at Circa in 2009,” Wilkinson told the Herald Sun.

“I want Crofter to be a modern-day inn. I grew up in a pub and that style of hospitality is what I want this to be, somewhere for a casual drink and snacks or full meal.”

The shakeup comes months after it was revealed that the former Masterchef judge underpaid his staff by $7.8 million.
