Instead of fighting with the peeler and tough skin, place a halved butternut pumpkin, skin up, in the oven to roast at about 180-200 degrees.

And after 20 minutes, take it out of the oven and remove the skin with your fingers (or, um, maybe some tongs).

Other viewers suggest putting the pumpkin in whole rather than cutting it which takes longer but is ‘less dangerous’ than cutting it in half when its raw.

Definitely trying this when I get home.
